  • 2 Packs instant noodles
  • 3 cup boiling water
  • 1/2 cup onions (diced)

  • 1/4 cup green bell peppers, (diced)
  • 1 Tomato, (diced)

Instructions

1.  Cook the noodles for about 2 minutes until the blocks of noodles separate in the water.

2. Remove from heat and drain.

3. Run some cold water over the noodles to stop the cooking process. Set aside.

4. Season the shrimps with salt and black pepper.

5. Heat the olive oil in a pan over medium-high and arrange the shrimp in a single layer and cook for 2 minutes.

6. Flip and cook for another 2 minutes. Remove from heat and set aside.

7. In the same pan, add about a tablespoon of oil.

8. Add the onions and saute until the onions become translucent.

9. Add the mushrooms and cook for about 3 minutes. (You can add a splash of water if it becomes too dry).

10.Throw in the bell peppers, tomatoes, and carrots. Season with seasoning powder and salt

11. Cook for about 2 to 3 minutes.

12. Stir in the cooked noodles and the shrimps and cook for about 2 minutes until heated through.

Ingredients

1.Peel and dice the plantains into tiny round shapes and sprinkle with salt.

2.Heat oil in a pan and fry the plantain until they are golden or brown. Then, drain them from the oil and set aside.

3.Place an empty pan on a stove, add about two tablespoons of cooking oil to it. Add onions and garlic and sauté for one minute.

4.Add sausage and stir fry for a few minutes followed with bell peppers.

5.Season with curry, thyme, dry pepper, one stock cube, and a pinch of salt to taste.

  • 2 Seasoning cubes.

Preparation

1.Blend the whole red bell peppers, tomatoes, scotch bonnet, and one onion. Ensure it is smooth or semi-smooth and set aside.

2.Chop the sweet peppers and one onion and set aside. Also, chop the yam into big size pieces, add 4-5 tablespoons of water, season with one seasoning cube and set aside.

3.Clean and chop the gizzard into bite-size pieces. Season with salt, one seasoning cube, onions, thyme, and curry powder. Cook till soft.

4.When the gizzard is well cooked, fry till golden brown.

5.Chop the plantain into bite-size pieces, then fry till golden brown and set aside.

 

6.Now fry the yam properly by adding water to the oil.

When water is added to the oil, the water cooks the yam before the frying process begins.

 

7.Fry till it’s well cooked. This should take 5-6 minutes. Leave to drain in a colander.

 

8.For the sauce, pour 1.5 cooking spoon vegetable a deep pan and place on medium heat. When the oil is hot, add chopped onions, saute till translucent. Then add the blended peppers, thyme, curry powder, one seasoning cube and salt to taste. Fry for 10-12 minutes. Be sure to stir every now and then to prevent burning.

 

9.After 10-13 minutes, add the chopped peppers and fry for a for 3 more minutes.

10.Then, add the fried gizzard, the fried yam, stir and combine. Leave to cook for 2 minutes.

11.Add the fried plantain and cook for a minute. Don’t cook for too long so the plantain does not become soggy.
