Learn How To Prepare Roasted Plantain, Grilled Fish And Sauce With This Recipe

Plantains are one of the major meals in West Africa. Africans consume plantains in different ways. From frying (dodo) to roasting, (bolé or boli) to grounding for swallow; there’s a long list of what can be done with plantains.

 

This piece will focus on roasted plantains.

 

Boli is very famous street food in Nigeria. Paired with fish and palm oil sauce, it is a staple in the South-south of Nigeria, especially the Port Harcourt and Bayelsa parts.

With the COVID-19 induced pandemic and subsequent restrictions of movement, buying street food is not very encouraged now.

 

If you’re a fan of roasted plantains, fish and sauce and you wish to replicate the delicious street food in your kitchen, then we got you covered.

 

With these uncomplicated steps, you can learn how to make this delicacy.

For the roasted plantains

What you’ll need are your plantains and a microwave. Yes, it’s really that simple.

How to prepare

  1. Rinse your plantains and peel off the skin.
  2. Place the plantain on a plate and put it in your microwave oven. Set the heat to medium or hot.
  3. Turn the sides of the plantain from time to time, so it can cook properly and evenly.
  4. Leave to cook for 10-15 minutes, depending on the quantity of plantain and how ripe it is.

If you like yours a little burnt and brown, you can leave it in the microwave for a few minutes more to achieve the crispy kind like in the photo.

For fish the grilled fish

What you’ll need

  1. 1/2 tbsp salt
  2. 1 tsp Cameroon pepper
  3. 1 tsp garlic powder
  4. 1 tsp ginger powder
  5. 1 tsp onion powder
  6. 1 tbsp olive oil
  7. 1 tilapia fish

How to grill the fish

Clean the fish and remove its scales. Pre-set oven to 375F (190C). Mix all the spices together. Smear the fish with the spices and oil; rubbing all over till its properly spiced. Leave to marinate for 1hr. You can also leave overnight if you have the time.

 

Afterward, wrap fish in foil paper and place it on a grill tray. Bake for 25 minutes, then switch to broil at 525F (275C) for five minutes before you set down.

For the palm oil pepper sauce

What you’ll need

  1. 2 tomatoes
  2. A small cup of habanero peppers
  3. 1/2 scotch bonnet pepper
  4. 1/2 medium onion
  5. Finely chopped
  6. 1 stock cube
  7. 1/4 tsp curry
  8. 1/4 cup of palm oil

How to prepare the sauce

Pre-heat your palm oil over low heat. Be careful to not let it overheat so it doesn’t lose its flavor. Pour your diced onions and saute for a few seconds. Add your roughly blended pepper and tomatoes. Fry for 15 minutes, season, and salt to taste.

 

Serve your roasted plantains, fish and sauce while hot.
