Preparation
- Cut and clean the fish thoroughly with lemon. Marinate with Salt, 1 Lemon, seasoning cubes, 1/2 of the curry, garlic powder. Leave to marinate in a cool place for at least 30 minutes.
- Blend the peppers, tomatoes, scotch bonnets, ginger, and one onion till smooth and set aside.
- Pour oil into a frying pan, enough to deep fry the fish, place on a hob on very medium heat, then fry the marinated fish till golden brown.
- Transfer the fried fish into a colander to drain the oil.
- Next, add some of the oil used for frying into a big saucepan, 1 cup at least. You should sieve out the fish residue/particles first, then place on a stove medium heat.
- When it’s hot, add the onions, sauté for 3 minutes, then add the garlic, sauté till fragrant. Be careful not to burn the garlic.
- Now, add Tomato Puree, fry for 3-4 minutes, stirring occasionally. Then add the blended pepper, also add the remaining thyme, curry, seasoning cube, and salt to taste. Stir and combine then leave to fry for 18-20 minutes.
And it’s ready. Serve with rice, fresh bread, boiled yam, or pair with ewedu or okra soup and enjoy with your preferred swallow.
