We already know that yam is one of the most versatile African foods. You could boil it, fry it, pound it, grind it (for yam flour); the list of what you can do with yam is endless.

 

But have you learned of yam Gratin?yam gratin

Gratin is a style of cooking in France where an ingredient is topped with a browned crust, often using breadcrumbs, grated cheese, egg or butter.

It is usually prepared in a shallow dish. A gratin is baked or cooked under an overhead grill or broiler to form a golden crust on top and is often served in the baking dish.

For this yam gratin recipe by Telande World, an African food platform, the yam is chopped then set aside. Then butter, garlic, chopped onions, and black pepper are sauteed in a nonstick pan. Afterward, cooking cream is added to the steaming vegetables. Then, cheddar cheese and salt are added to the pan and everything is stirred together to achieve a soup-like consistency.

 

In another pan, the already diced yam is added to olive oil, and chives and parsley are sprinkled on it. The cream sauce is then poured on the yams and put in the oven to achieve skillet herb yam gratin. Ingenious, yes?
